Ingredients
- 1 kg quark
- 150 g butter
- 1 tbsp breadcrumbs (for the pan)
- 150 g sugar
- a pinch salt
- 1 vanilla bean (mash)
- 5 eggs
- 4 tbsp semolina
- 1 untreated lemon (juice and zest)
- 1 packet vanilla pudding powder
- 1 tsp Baking powder
- butter (for the springform)
- powdered sugar (for dusting)

Preheat the oven to 180°C fan. Butter a springform pan and line with breadcrumbs.

Whisk quark, butter, sugar, salt and vanilla mash until fluffy. Separate the eggs; gradually add yolks while whisking. Stir in semolina, lemon juice, zest, pudding powder and baking powder until smooth. Fold in stiffly beaten egg whites and pour into the prepared pan. Smooth the top and bake for about 50 minutes until golden brown. If the cake darkens too much, cover with foil.

Let the cake cool in the pan. Remove from the springform and dust with powdered sugar before serving.
