- 500 g salmon fillet
- 4 mostly firm potatoes
- 1 EL semolina
- 2 Eggs (size M)
- salt, pepper
- flour
- oil (for frying)
- 150 g crème fraîche
- 50 g crème double
- 1 EL grated horseradish
- 2 EL chopped dill
- a few drops lemon juice
- salt, pepper
- dill (for garnish)

Cut the salmon fillet into bite-sized cubes. Peel, rinse, finely grate the potatoes and squeeze out excess moisture with kitchen paper. Mix potato grating with semolina. Beat eggs with salt and pepper. Coat salmon cubes first in flour, then in beaten egg, and finally in the potato mixture. Fry portions in hot oil (170°C) until golden brown. Drain on kitchen paper.

Whisk together crème fraîche, crème double, horseradish, and dill. Season with lemon juice, salt, and pepper. Serve everything together garnished with dill.
