Salmon Zucchini Skewers

Ingredients

  • 200 g medium zucchini (1 medium zucchini)
  • 1 tbsp Rapeseed Oil
  • 100 g smoked salmon (6 slices)
  • 1 tbsp Lemon Juice
  • 1 tbsp sour cream
  • 1 tsp horseradish (jarred)
  • Salt
  • Pepper
  • garden cress
  • 6 thin spring onions
  • 6 pumpernickel plates
  • 6 toothpicks (for securing)

Instructions

    Wash, trim and slice the zucchini into 12 rounds. Heat oil and fry the zucchini slices on both sides until golden yellow. Drain on paper towels and let cool.

    Drizzle smoked salmon with lemon juice. Whisk sour cream with horseradish, salt, pepper, then fold in garden cress. Spread the cream mixture over the salmon and roll into parcels.

    Trim spring onions, cutting white part to about 8 cm. Skewer each toothpick with one spring onion piece, one zucchini slice, one salmon parcel, and another zucchini slice.

    Serve on pumpernickel plates.
