Hearty Semolina Pizza

Ingredients

  • 1 tsp salt
  • 1 tbsp butter
  • 150 g cornmeal
  • 1 ball mozzarella (125 g)
  • 100 g stem broccoli (or broccoli)
  • 3 dried tomatoes
  • 2 tbsp black olives (pitted)
  • 200 g raw bratwurst
  • 1 tbsp Olive Oil

Instructions

    Bring 500 ml water to a boil with the salt and butter. Whisk in the cornmeal, remove from heat and let it thicken for about 20 minutes, stirring occasionally.

    Drain the mozzarella and dice into small cubes. Wash the broccoli, remove leaves and cut florets into smaller pieces if desired. Blanch in boiling salted water for about 1 minute, drain, shock in cold water and dry. Halve the dried tomatoes. Drain the olives. Press the bratwurst to form small balls.

    Preheat the oven to 200°C (392°F) with upper and lower heat and brush a baking tray with oil.

    Spread the thickened cornmeal into a circle of about 26 cm diameter on the tray (use a springform rim as a border). Brush the surface lightly with remaining oil and sprinkle with mozzarella. Top with tomatoes, olives and bratwurst balls and bake for about 25 minutes. In the last 5 minutes add the broccoli and finish baking. Slice into pieces before serving.
