Ingredients

  • 1 egg yolk
  • 0.5 tsp mustard
  • Salt
  • white pepper
  • 0.25 tsp liquid honey
  • 125 ml olive oil
  • 1 tbsp lime juice
  • 1 pinch grated lime zest
  • 1 Shallot
  • 400 g salmon fillet (skinless)
  • 1 tbsp finely chopped parsley
  • 1 tbsp Lemon Juice
  • 1 tbsp quark
  • 1 egg
  • 3 tbsp breadcrumbs
  • Salt
  • white pepper (ground)
  • flour (for shaping)
  • oil (for frying)
  • 4 ciabatta rolls
  • 1 tbsp butter
  • 100 g Arugula

Instructions

    For the lime mayonnaise whisk the egg yolk with mustard, salt, pepper and honey. Gradually whisk in the oil until the mixture is homogeneous. Stir in lime juice and zest. Cover and refrigerate.

    Peel and finely dice the shallot for the salmon patties. Remove pin bones from the salmon, cut into small pieces and then mince finely. Mix salmon with shallots, parsley, lemon juice, quark, egg and breadcrumbs; season with salt and pepper. Shape eight patties with floured hands and fry in hot oil in a pan, browning each side for about 4 minutes.

    To serve split the ciabatta rolls and toast the cut sides in hot butter until golden brown. Wash and dry the arugula. Place some arugula and a salmon patty on one half of each roll, spoon lime mayonnaise over it, then top with the other roll half. Serve remaining lime mayonnaise on the side.
