Potato Burger

- 800 g potatoes (firm, cooking type)
- Salt
- black pepper (freshly ground)
- nutmeg
- 1 tbsp potato starch
- 1 egg
- 150 g flour
- 1 bunch parsley
- 4 slices Gouda cheese
- panko breadcrumbs (for coating)
- butterfat (for frying)
- 125 g arugula
- 2 red bell peppers (sliced)

Peel the potatoes and boil them in salted water for about 30 minutes. Drain and let cool slightly, then mash with a potato masher into a bowl. Stir in the starch, egg, flour, salt, pepper, and nutmeg. Wash, dry, and finely chop the parsley; fold it into the mixture. Divide the dough into eight portions, shape each into a flat patty, sprinkle with parsley, top with cheese, and fold over to seal. Coat each patty in panko breadcrumbs and fry in hot butterfat for about 5 minutes on each side over medium heat.

Wash and dry the arugula, then arrange it on plates. Place the cooked burgers on the salad and garnish with sliced bell peppers before serving.
