Beef Patty with Salad and Fries

Ingredients
- 1 old-fashioned roll
- 1 Shallot
- 1 Garlic clove
- 5 tbsp olive oil
- 600 g ground beef
- 1 egg
- 1 tsp sharp mustard
- Salt
- Pepper (freshly ground)

- 700 g large, waxy potatoes
- 1 bundle arugula
- 6 ripe tomatoes
- 1 Red Onion
- 1 Garlic clove
- 1 tbsp freshly chopped parsley
- 2 tbsp white wine vinegar
- Sugar to taste
Instructions

Soak the roll in lukewarm water.

Peel and finely chop the shallot and garlic; sauté them with 1 tbsp oil in a pan until translucent, then remove from heat and let cool.

Combine the ground beef with the egg, mustard, squeezed-out roll crumbs, and the onion-garlic mixture; season with salt and pepper.

Heat fat in a pot to about 165°C for frying the fries. It’s ready when bubbles rise on a wooden spoon handle dipped into the oil.

Peel the potatoes, cut them into evenly thick sticks, and pat dry.

Add portions of potatoes to the hot oil and fry for about 5 minutes until tender but still pale; remove from oil.

Increase temperature to about 190°C. Fry the potatoes again in small batches for another 2 minutes until crisp and golden brown. Drain well and sprinkle with salt.

Shape the meat mixture into four patties, press them slightly flat, and grill each side for about 4 minutes on a hot grill; trim any edges if needed.

Meanwhile, wash, rinse, and dry the arugula.

Wash the tomatoes, remove stems and seeds, and dice the flesh finely. Peel and finely dice the onion and garlic. Mix tomatoes with parsley, vinegar, remaining oil, salt, pepper, and a pinch of sugar to taste.

Plate the fries, beef patties, and arugula together and serve with the tomato salad.
