Salmon Fillets with Orange Wasabi Sauce

Ingredients
- 1 bunch spring onions
- 2 Garlic cloves
- 600 g salmon fillet (ready to cook, skinless)
- Salt
- Pepper (freshly ground)
- 2 tbsp plant oil
- 5 tbsp crème fraîche
- 8 tbsp orange juice
- 1 tbsp lime juice
- 1 tsp wasabi
- 0.5 bunch coriander
Instructions

Rinse the spring onions, shake dry and slice into thin rings.

Peel the garlic, press flat with a knife edge and finely chop.

Wash the salmon, pat dry, remove any excess tendons and skin, cut into 8 equal pieces and season with salt and pepper.

Heat oil in a pan and sear the salmon slices for about 1 minute on each side until golden brown.

Whisk crème fraîche with 1-2 tbsp orange juice and season with salt and pepper.

Add the spring onions and garlic to the salmon and sauté briefly.

Pour in the remaining orange juice with lime juice and bring to a simmer.

Add 120 ml water, bring to a boil again.

Stir in wasabi.

Rinse coriander, shake dry, finely chop leaves and add to the sauce.

Taste the sauce one more time, plate the salmon on preheated plates, garnish each with a dollop of crème fraîche and serve.
