Ingredients
- 2 untreated lemons
- 40 ml lemon juice
- 1 tbsp chopped dill
- Salt
- 1 tsp sugar
- white pepper
- 0.5 tsp grated lemon zest
- 4 tbsp vanilla aroma
- 250 g very fresh salmon fillet

Wash the untreated lemons hot, then dry and cut 12 nice slices (use the cuts elsewhere). Whisk lemon juice with sugar, vanilla oil, a bit of salt and pepper, then fold in the dill.

Wash salmon fillet, pat dry, cut into small pieces and finely chop. Mix the salmon meat with the dill marination, let it marinate in the fridge for 10 minutes, taste and then use a ball-shaped mold to place walnut-sized portions of tartare (with as little liquid as possible) on each lemon slice.
