Ingredients
- 250 g pearl onions
- 200 g peas
- 250 g sugar snap beans
- 2 tbsp butter
- Salt
- Pepper (freshly ground)
- 100 ml dry white wine
- 200 ml fish stock
- 600 g salmon fillet
- 1 handful watercress

Peel the onions. Rinse and drain the peas. Wash, trim, and cut the sugar snap beans diagonally into pieces. Sauté all vegetables in hot butter. Season with salt and pepper, then deglaze with wine and stock.

Rinse the salmon, cut into four portions, season, place in the sauce, cover, and gently simmer for about 10 minutes.

Rinse the watercress, trim, and drain. Plate the salmon, top with vegetables, let the stock reduce slightly, taste, drizzle over fish and veggies, and garnish with watercress before serving.
