Salmon on Zucchini Vegetable

Ingredients
- 1 Zucchini
- 1 large green bell pepper
- 1 onion
- 1 red chili pepper
- 2 tbsp raisins
- 2 tbsp olive oil
- 0.5 tsp garam masala
- 0.25 tsp cumin (ground)
- Cayenne pepper
- Salt
- freshly ground pepper
- 150 ml Vegetable broth
- 350 g salmon fillet (2 pieces)

Soak raisins in a little warm water. Wash, trim and slice zucchini into thin cross‑sections. Wash, trim, halve, seed, remove white membranes from bell pepper and cut into strips. Peel onion and dice finely. Wash chili, slit lengthwise, seed, remove white membranes and dice very finely.

Heat oil in a wide oven‑proof pan, sauté onions, chili, garam masala and cumin until fragrant, add zucchini and bell pepper and stir for about 2 minutes. Add drained raisins and broth, season with salt, pepper and cayenne, and simmer for about 5 minutes. Place salmon on top of the vegetables, cover with some of the sauce and bake in a preheated oven at 180 °C for about 8–10 minutes. Remove, plate and serve e.g. with saffron rice.
