Ingredients

  • 700 g salmon fillet
  • fat (for greasing the pan)
  • 150 g goat cream cheese
  • 3 tbsp breadcrumbs
  • Salt
  • pepper (ground)
  • 1 bunch watercress
  • 1 bunch parsley
  • 1 bunch dill
  • 1 bunch chervil
  • 2 tbsp lovage (coarsely chopped)
  • 1 tbsp lingonberry jam
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Rapeseed oil
  • honey

Instructions

    Rinse the salmon fillet cold, pat dry and cut into 8 roughly equal pieces. Preheat the oven to 240°C with top and bottom heat. Grease a baking dish.

    Mix goat cheese with breadcrumbs, season with salt and pepper. Place the fish in the dish, season, and spread the goat cheese mixture on top. Bake for about 10 minutes until golden.

    Remove herbs from stems and arrange on plates. Whisk lingonberries with vinegar and oil, then season with honey, salt, and pepper to make a vinaigrette. Drizzle over the herbs and serve the fish atop.
