Ingredients

  • 1000 g salmon fillet with skin (4 salmon fillets)
  • 0.5 bunch watercress
  • 200 g lamb's lettuce
  • 2 oranges
  • 3 limes
  • 1 tsp orange zest
  • 1 tsp dill sprigs (dried)
  • 1 tsp grated ginger
  • Salt
  • Pepper
  • 4 tbsp olive oil

    1) Prepare the marinate:

    Squeeze the oranges and one lime, mix in dill, ginger and orange zest, season with salt and pepper.

    2) Cook the salmon:

    Pour 2/3 of the vinaigrette over the salmon steaks, place them in a parchment bag, seal and marinate in the refrigerator for about 1 hour.

    Transfer the parchment bag to a preheated oven at 180°C and steam the salmon steaks for about 20 minutes in their own juices.

    3) Prepare the salad:

    Wash, clean and dry the salad and watercress. Mix the remaining vinaigrette with oil and season to taste. Spread the salad on plates, wash the limes and cut into wedges, marinate the salad.

    Remove the salmon steaks from the oven and arrange them over the salad, serve immediately.
