Salmon Bites

Ingredients

  • soft butter (for the molds)
  • 1 roll of puff pastry (about 300 g, refrigerated)
  • flour (for working)
  • dried legumes (to weigh down)
  • 100 g Sour cream
  • 100 g goat fresh cheese
  • 2 tbsp milk
  • a pinch ground ginger
  • Salt
  • pepper (from the mill)
  • 1 untreated lime (juice and zest)
  • 200 g smoked salmon (slices)
  • 3 tbsp chives curls

Instructions

    Preheat the oven to 200°C fan.

    Brush muffin tin depressions with butter. Roll out the puff pastry on a floured surface slightly larger than needed. Cut circles of 10-12 cm diameter with a dough cutter and place in the muffin cups. Trim parchment paper and lay it in the cups, then sprinkle with legumes. Bake in the oven for about 15 minutes until golden brown, then remove and cool.

    Whisk together sour cream, goat cheese, and milk until smooth. Season with ginger, salt, pepper, lime juice, and zest.

    Carefully lift the chilled tarts from the molds and spoon 1-2 tbsp of the creamy sauce into each. Top with a slice of salmon and sprinkle with chives before serving.
