Salad with Beans and Chanterelles

Ingredients
- 200 g yellow beans
- 200 g Green beans
- 0.5 head frisée lettuce
- 1 head radicchio
- 1 small yellow zucchini
- 200 g fresh chanterelles
- 1 Red Onion
- 1 Garlic clove
- 4 tbsp white wine vinegar
- 5 tbsp olive oil
- 2 tsp walnut oil
- Salt
- Pepper (freshly ground)
- tarragon (optional)
- 1 stalk thyme
Instructions

Bring a pot of water to a boil for blanching the beans. In the meantime, clean the beans, optionally halve or quarter them. Boil the beans for about 3 minutes until al dente, drain and immediately shock with cold water until cooled; let drain.

Remove stems from the salads, wash leaves briefly and let drain in a colander.

Clean the zucchini and slice thinly. Clean the chanterelles, optionally rinse briefly (then dry well); halve large ones. Tear salad leaves into bite-sized pieces and mix with other salad ingredients in a bowl or arrange on four plates.

Finely dice the onion and garlic clove for the dressing. Whisk vinegar with oils, salt, pepper, torn herbs, and diced onion and garlic. Drizzle dressing over salad and gently toss.
