Salad with White Beans, Sprouts and Chicken

Ingredients
- 500 g thick bean pods
- Salt
- 70 g baby spinach
- 200 g fresh soybean sprouts
- 80 g Parmesan cheese
- 3 chicken breast fillets (about 120 g each)
- 1 tbsp butter
- pepper (ground)
- 50 ml dry white wine
- 100 g crème fraîche
- 4 tbsp red cabbage sprouts
Instructions

Squeeze the thick beans out of their pods. Blanch in boiling salted water for about 5 minutes, then shock in cold water and press individual beans between thumb and forefinger until the outer skin bursts and can be removed.

Wash and dry the baby spinach. Rinse the soybean sprouts in a sieve and let them drain. Crumble the parmesan.

Rinse the chicken, pat dry with paper towels and slice into thin strips. Heat butter in a pan, brown the chicken strips for about 2 minutes on each side, then set aside. Season with salt and pepper.

Add white wine and crème fraîche to the pan, stir and bring to a boil once. Taste and adjust seasoning with salt and pepper.

Combine spinach, soybean sprouts, beans and chicken strips; serve on plates. Sprinkle parmesan and pour sauce from the pan over the salad, garnish with red cabbage sprouts. Serve immediately.
