Lima Bean, Cabbage and Radish Salad

Ingredients

  • 250 g lima bean
  • 500 g cabbage
  • Salt
  • 700 ml vegetable broth
  • 6 Radishes
  • 1 yellow bell pepper
  • 1 large onion
  • 2 untreated limes
  • 3 tbsp olive oil
  • pepper (ground)

    Soak the beans overnight in cold water. Clean the cabbage, remove the tough core and cut into strips. Mix with 1.5 tbsp salt and let sit for 2 hours. Cook the beans in broth for about 1 hour.

    Wash, trim and slice radishes thinly or shave them. Wash bell pepper, quarter, deseed and dice finely. Peel onion, halve, deseed and cut into strips. Rinse limes hot, quarter one lime and squeeze juice from the second. Mix oil with lime juice and season with salt and pepper. Squeeze cabbage. Drain beans, rinse cold and let drain well. Combine cabbage, radishes, onion strips and bell pepper, arrange on plates, drizzle with vinaigrette, sprinkle pepper and serve with lime wedges.
