Cheese and Fig Salad

Ingredients
- 80 g macadamia nuts
- 6 figs
- 3 tbsp Rapeseed oil
- 1 tsp liquid honey
- 3 tbsp apple cider vinegar
- 80 ml apple juice
- Sea salt
- pepper (ground fresh)
- 300 g goat fresh cheese
- a handful of chives rings
- 200 g mixed salad greens (e.g., red and green oak leaf, arugula)
Instructions

Roast the nuts lightly in a hot pan, remove and let cool.

Clean the figs and cut into wedges. In the hot pan, briefly sauté them in 1 tbsp oil, drizzle with honey, then deglaze with vinegar and apple juice. Remove from heat, stir in remaining oil, season with salt and pepper.

Form the cheese into small balls and roll them in chives.

Wash, dry, and tear the salad greens into bite‑sized pieces. Arrange on plates, top with figs and dressing, then add the cheese balls. Sprinkle nuts over the top and serve.
