Sage Potatoes

Fresh root vegetable dish featuring crisp potatoes and aromatic sage.
Ingredients
- 1.2 kg new potatoes
- 2 shallots
- 4 Garlic cloves
- 2 tbsp butter
- 4 tbsp olive oil
- 1 bunch sage
- 5 tbsp vegetable broth (from a jar)
- salt (pepper)
Instructions

Wash the potatoes thoroughly. Peel and quarter the shallots. Heat butter and olive oil in a pot, sauté the shallots until translucent, add the potatoes and garlic (with skins), season with salt and pepper.

Rinse the sage, pluck leaves from stems, roughly chop and mix into the potatoes.

Pour in the broth, cover, and simmer over low heat for about 40 minutes. Shake the pot several times to ensure even cooking.
