Ingredients
- 250 g porcini mushrooms (or substitute with button mushrooms)
- 2 tbsp olive oil
- 1 Garlic clove
- Salt
- freshly ground pepper
- 1 stalk leeks
- 4 tbsp white wine
- 2 tbsp olive oil (for frying)
- 4 sprigs oregano
- 1 tsp thyme leaves

Clean and slice the porcini mushrooms. Heat olive oil and quickly sear the mushrooms over high heat until crisp. Peel and press the garlic into the pan. Season with salt and pepper. Let cool on a plate.

Wash and finely slice the leeks. Add to the mushroom fat and sauté briefly. Deglaze with white wine. Remove from the pan.

Heat olive oil, quickly fry the herbs, then drain on paper towels. Arrange the porcini mushrooms with the leeks and sprinkle the herbs over them.
