- 800 g waxy potatoes
- Salt
- 4 stalks tarragon
- 200 ml lukewarm milk
- 40 g melted butter
- pepper (ground)
- nutmeg
- 0.5 g ground saffron

Peel, wash and boil the potatoes in salted water for 25-30 minutes until tender. Meanwhile rinse the tarragon, shake dry, strip half of the leaves and finely chop. Drain the potatoes, let them steam off, mash with a potato masher and mix in milk and butter to create a smooth purée.

Season with salt, pepper, nutmeg and saffron; taste and adjust. Transfer to preheated bowls and garnish with chopped and whole tarragon before serving.
