Saffron Potatoes

Ingredients
- 800 g starchy potatoes
- 150 g spring onions
- 2 EL Butter
- 2 EL olive oil
- 1 bay leaf
- 2 tsp saffron powder
- 1 tsp cumin seeds
- 5 coriander stems
- Salt
- Pepper (freshly ground)

Preheat oven to 200°C. Peel the potatoes. Clean and dry the spring onions, then cut them crosswise into about 4 cm long pieces.

Heat butter and olive oil in a pan, add potatoes and spring onions, fry everything for 3-4 minutes until golden brown. Transfer the mixture to an oven-safe pot, pour in 400 ml hot water, add bay leaf, saffron, cumin seeds and coriander stems, season with salt and pepper, cover and bake in the preheated oven for about 30 minutes.

Remove the lid and bake uncovered for another 20 minutes until most of the liquid has evaporated. Taste the potatoes and spring onions again; serve with lamb skewers or fish.
