Ingredients

  • 200 g fresh straw mushrooms (or small porcini)
  • 3 pickles
  • 500 g cooked white beans
  • 1 onion
  • 2 cooked beetroot (peeled)
  • 50 g roasted pine nuts
  • 150 g Sour cream
  • 2 tbsp lemon juice
  • Salt
  • white pepper
  • a pinch sugar
  • 2 tbsp oil

Instructions

    Clean the mushrooms, cut them in half or quarters depending on size and quickly sauté in hot oil over high heat; season with salt and pepper and let cool.

    Drain the beans. Slice the pickles. Peel and finely chop the onion. Dice the beetroot. Roughly chop the pine nuts.
