Ingredients
- 200 g fresh straw mushrooms (or small porcini)
- 3 pickles
- 500 g cooked white beans
- 1 onion
- 2 cooked beetroot (peeled)
- 50 g roasted pine nuts
- 150 g Sour cream
- 2 tbsp lemon juice
- Salt
- white pepper
- a pinch sugar
- 2 tbsp oil

Clean the mushrooms, cut them in half or quarters depending on size and quickly sauté in hot oil over high heat; season with salt and pepper and let cool.

Drain the beans. Slice the pickles. Peel and finely chop the onion. Dice the beetroot. Roughly chop the pine nuts.
