- 300 g sirloin steak (beef, lean)
- 1 Tbsp clarified butter
- Pepper
- 150 g arugula
- 1 lemon
- 2 tbsp white balsamic vinegar
- 4 tbsp olive oil
- a pinch sugar
- Salt
- Pepper
- 50 g grated Parmesan

Preheat the oven to 100°C.

Sear the sirloin steak in a hot pan with clarified butter on all sides. Season with pepper, wrap in foil and bake for about 20 minutes.

Wash and dry the arugula, then spread it onto four plates. Wash the lemon, cut out four nice slices, and squeeze the remaining juice. Mix the lemon juice with the vinegar and oil. Season with sugar, salt, and pepper.

Remove the steak from the oven, slice into thin strips and distribute over the arugula. Sprinkle with parmesan and drizzle the dressing on top. Serve garnished with a lemon slice on each plate.
