Ingredients

  • 60 g mixed nuts
  • 4 tbsp apple cider vinegar
  • 1 tbsp honey
  • 2 oranges
  • 1 grapefruit
  • 2 Apples
  • 1 white chicory head
  • 1 red chicory head
  • Salt
  • 2 tbsp walnut oil

Instructions

    Place the mixed nuts in a small bowl and combine with the vinegar and honey.

    Peel the oranges and grapefruit completely with a sharp knife, then cut out the segments between the membranes. Catch the released juice. Squeeze the remaining membranes for more juice. Wash, peel, core, and slice the apples into wedges. Mix with the citrus juice.

    Remove leaves from both chicories, wash, and cut into bite-sized pieces. Arrange on plates, top with orange, grapefruit, and apple wedges. Stir walnut oil into the nut mixture and season with a pinch of salt to make a dressing. Sprinkle over the salad and serve.
