Ingredients
- 6 pears
- 1 untreated lemon
- 2 Cinnamon sticks
- 10 star anise
- 60 g white demerara sugar
- 800 ml white rum

Wash, dry, slice pears into wedges and remove the core. Rinse the lemon hot, pat dry and thinly peel the zest. Squeeze the juice and mix with the pears.

Break the cinnamon sticks into pieces and fill pre-rinsed jars with the star anise, pears, sugar, and lemon zest; pour rum over until covered, seal tightly and let steep in a cool dark place for about 6 weeks.
