Marzipan Coins

Ingredients

  • 250 g flour
  • 150 g powdered sugar
  • 150 g butter
  • 1 egg yolk
  • 1 tsp rum (optional)
  • 100 g marzipan core
  • 50 g powdered sugar
  • 1 tsp lemon juice
  • 100 g milk chocolate couverture
  • 1 tsp oil
  • flour (for working)
  • parchment paper (for baking sheet)

Instructions

    Sift the flour into a bowl. Quickly knead with powdered sugar, butter in chunks, egg yolk and rum until a smooth dough forms. Wrap in cling film and refrigerate for 30 minutes.

    Preheat the oven. Line baking sheets with parchment paper. Roll out the dough on a floured surface to 3-4 mm thickness. Cut circles about 4 cm in diameter and place on the sheet. Bake at 175°C (fan 160°C) for 12 minutes until golden yellow. Remove from the sheet using the parchment and let cool.

    For decoration, knead marzipan with powdered sugar and lemon juice. Roll between cling film to 3 mm thickness and cut small star shapes. Break chocolate into pieces and melt in a double boiler with oil. Dip the cookies in the melted chocolate and top with marzipan stars.
