Ingredients
- 400 g Carrots
- 4 tbsp olive oil
- 1 tbsp Lemon Juice
- Salt
- pepper (to taste)
- sugar (to taste)
- 600 g red cabbage
- 2 tbsp white wine vinegar
- 2 tbsp freshly chopped herbs (e.g., chives, parsley, dill, tarragon etc.)
Instructions

Peel the carrots, grate finely and mix with 1 tbsp oil and 1 tbsp lemon juice; season with salt, pepper, and sugar. Remove outer leaves of the red cabbage, cut out the tough core, and shred or julienne the cabbage into fine strips.

Combine remaining oil and vinegar, season with salt and pepper, taste, and serve alongside the carrot salad in wooden bowls. Sprinkle with freshly chopped herbs before serving.
