Cabbage Salad with Sprouts

Ingredients

  • 1 small white cabbage (ca. 500 g)
  • Salt
  • 250 g carrots
  • 125 g chickpea sprouts
  • 40 g raisins
  • 4 tbsp white wine vinegar
  • 2 tsp grated horseradish
  • 0.5 tsp mustard seeds
  • 50 g crème fraîche
  • 2 tbsp chopped parsley
  • pepper (ground)
  • 1 pinch sugar
  • 4 tbsp oil

Instructions

    Clean the cabbage and cut into fine strips. Bring plenty of salted water to a boil. Blanch the cabbage for 1-2 minutes, then drain in a colander and rinse with cold water. Let it dry well. Peel and grate the carrots. Rinse chickpea sprouts under cold water and blanch them in boiling water for about 3 minutes, then drain and let dry.

    Mix all prepared ingredients with the raisins in a bowl.

    Whisk vinegar with crème fraîche, horseradish, salt, pepper, mustard seeds, and sugar. Gradually stir in oil. Pour over the salad, mix in parsley, and leave to rest for about 30 minutes before serving.
