Rosemary Roasted Potatoes

Ingredients

  • 500 g young firm-cooking potatoes
  • olive oil (for the tray)
  • 3 sprigs rosemary
  • Salt
  • Pepper (freshly ground)
  • 5 tbsp olive oil

Instructions

    Preheat the oven to 200°C fan or conventional heat. Wash the potatoes, halve them and arrange cut‑side up on a well‑oiled baking sheet.

    Wash the rosemary, shake dry, pluck the needles and finely chop. Season the potatoes with salt and pepper, sprinkle with rosemary and drizzle with a little olive oil. Roast in the preheated oven for 30–35 minutes until golden‑brown, turning occasionally. Remove and serve alongside meat dishes.
