Cauliflower with Eggs and Breadcrumbs

Ingredients
- 4 eggs
- 1 medium cauliflower
- 2 tbsp chopped parsley
- Salt
- Pepper (freshly ground)
- 4 tbsp butter
- 6 tbsp breadcrumbs
- nutmeg

Cook the eggs in about 10 minutes until hard-boiled, cool, peel and roughly chop. Wash, trim and cut the cauliflower into florets; boil in salted water for about 10 minutes until al dente, drain and set aside.

Meanwhile heat the butter and toast the breadcrumbs for about 2 minutes. Stir in parsley and eggs, season with salt, pepper and nutmeg. Arrange the cauliflower on plates and spoon the egg-breadcrumb mixture over it.
