Roasted Tomato Toasts
Roasted tomato toasts: simple and tasty as an appetizer or snack. The tomato toasts are low in calories and provide potassium and folic acid.
Ingredients
- 320 g ripe tomatoes (4 ripe tomatoes)
- 2 Garlic cloves
- 80 g whole‑grain baguette (8 slices)
- Salt
- coarsely ground pepper
- 2 tbsp olive oil
Instructions

Wash the tomatoes, pat them dry and cut them in half. Peel the garlic and also halve it.

Toast the bread slices in a grill pan or under the oven broiler without added fat until golden brown on both sides.

Remove them, let them cool slightly on the work surface, and rub the cut surfaces with the garlic. If desired, slice the garlic into very thin rounds and serve alongside the toasts.

Place the tomato halves on the bread slices and press firmly by hand so that tomato juice and pulp are absorbed by the bread. For firmer tomatoes: use a teaspoon to scoop out the pulp and spread it over the toasts.

Season the finished toasts with salt and pepper. Drizzle with olive oil, garnish with sliced garlic if desired, and serve.
