The watermelon salad with feta and mint from Spoonsparrow brings a vacation vibe.
Ingredients
- 800 g watermelon flesh
- 200 g feta (50% fat in the package)
- 2 stems Mint
- 2 stems basil
- 1 Lime (juice)
- 1 tsp liquid honey
- 2 tbsp white balsamic vinegar
- 4 tbsp olive oil
- Salt
- Pepper
Instructions

Cut watermelon flesh into about 1 cm thick slices, then cut into triangles. Cut feta into small cubes and add to the watermelon pieces in a bowl.

Wash herbs, pat dry, remove leaves from stems and sprinkle over the salad.

For the dressing whisk lime juice with honey, vinegar, oil, salt and pepper. Pour over the watermelon salad with feta and serve.
