Kohlrabi Raw Snack
Crunchy kohlrabi sticks with toasted sesame: a fresh alternative to soft-cooked stem vegetables.
Ingredients
- 500 g kohlrabi (1 kohlrabi)
- Salt
- 10 g unpeeled sesame seeds
- 0.5 small organic lemon
- black pepper

Peel the kohlrabi, halve it, and slice into long, thin strips using a vegetable peeler or paring knife.

Cut the kohlrabi slices into thin, long ribbons with a sharp knife.

In a bowl, toss the kohlrabi ribbons with a pinch of salt and let them sit for 10 minutes to draw out juice.

Meanwhile, toast the sesame seeds in a small pan without oil until fragrant, then set aside to cool.

Rinse the lemon hot, dry it, and use a paring knife to peel a wide strip of zest very thinly.

Cut the lemon zest into julienne strips. Squeeze the lemon for juice.

Slightly squeeze the kohlrabi ribbons to remove excess moisture. In the bowl, combine with lemon zest and 1–2 teaspoons of lemon juice. Season with pepper and fold in half of the toasted sesame seeds.

Arrange the kohlrabi snack on a plate, sprinkle with remaining sesame seeds, and serve immediately.
