Roasted Potatoes with Sesame and Cottage Cheese

Roasted potatoes with sesame and cottage cheese from Spoonsparrow are always well received.

Ingredients

  • 750 g small waxy potatoes
  • Salt
  • olive oil (for brushing)
  • 2 tbsp sesame seeds
  • 400 g Cottage Cheese
  • pepper (ground)
  • 2 tbsp chopped mixed herbs
  • 1 tbsp Lemon Juice
  • 1 red bell pepper
  • parsley (for garnish)

Instructions

    Wash the potatoes thoroughly and steam them in their skins for 25-30 minutes until just tender, depending on size. Let them cool slightly, then cut them lengthwise and place them cut-side up on a sheet brushed with olive oil; brush the cut sides again, season with salt, sprinkle sesame seeds, and broil under the oven grill until golden brown.

    Meanwhile mix the cottage cheese with salt, pepper, lemon juice, and herbs. Slice the bell pepper into strips. Arrange the roasted potatoes in small bowls topped with dollops of the seasoned cottage cheese and a few pepper strips. Garnish with parsley before serving.
