Basmati Rice with Garden Herb Sauce

Ingredients
- 150 g Basmati rice
- 1 small red chili pepper
- 1 Garlic clove
- 1 Shallot
- 2 bunches parsley
- 6 tbsp Olive oil
- 2 tbsp lemon juice
- Salt
- black pepper (freshly ground)
Instructions

Wash the rice thoroughly in a sieve under running water, then bring to a boil with 1.5 times the amount of water and a pinch of salt in a pot; cover and simmer for about 20 minutes over low heat until absorbed.

For the sauce wash and dry the parsley, remove stems, finely chop the leaves. Peel and finely chop the shallot and garlic. Wash the chili pepper, halve it lengthwise, deseed, remove all white membranes, and finely chop.

Sauté the shallot, garlic, and chili in hot olive oil until translucent; add the parsley and cook briefly. Stir in lemon juice, season with salt and pepper, and let cool.

Serve the rice topped with the herb sauce on a plate.
