Ingredients
- 800 g young carrots
- 2 tbsp lemon juice
- 1 tbsp fresh chopped thyme
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 2 tbsp liquid honey
- 1 tbsp butter

Preheat the oven to 180°C with fan and top heating.

Peel, clean, and optionally leave some greens on the carrots. Depending on size, leave whole or halve lengthwise. Toss with lemon juice, thyme, olive oil, salt, and pepper, then spread on a baking tray. Roast for about 20 minutes until lightly crisp. During the last 5-10 minutes drizzle honey, add butter, mix well, and allow to caramelize.
