Oven Potatoes with Salmon Cream and Arugula

Ingredients
- 400 g waxy potatoes
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 100 g Arugula
- 1 bunch dill (30 g)
- 200 g smoked salmon
- 300 g cream cheese (double thickened)
- 50 ml heavy cream (at least 30% fat content)
- 1 tbsp Lemon Juice

Preheat the oven to 200°C with upper and lower heat.

Wash the potatoes, halve them and place them cut side up on a baking sheet lined with parchment paper. Drizzle with olive oil, season with salt and pepper, and bake in the preheated oven for 20-25 minutes until golden brown. Meanwhile wash the arugula, shake dry and set aside. Wash the dill, shake dry and finely chop. Dice the smoked salmon into small cubes and mix with the cream cheese, heavy cream and dill; season with salt, pepper and lemon juice. Arrange the cooked potatoes on a plate, top each with a dollop of the salmon-cream mixture, and garnish with arugula. Serve immediately.
