Grandma's Tomato Salad

Grandma's tomato salad from Spoonsparrow tastes great for the whole family, satisfies hunger and delivers many nutrients.

Ingredients

  • 250 g field beans
  • 0.5 onion
  • olive oil (for sautéing)
  • 100 ml Vegetable broth
  • 500 g assorted tomatoes (e.g., orange, red and yellow)
  • 0.5 radish
  • 2 tbsp mild vinegar (e.g., herb vinegar)
  • 2 tbsp olive oil
  • 1 tbsp warm water
  • 1 tsp lemon oil (optional)
  • 1 finely chopped garlic clove
  • 0.5 tsp Salt
  • 2 pinch sugar
  • 2 sprigs chopped parsley
  • parsley (for garnish)

Instructions

    Open the skins of the field beans and peel the beans out. In a pot heat the oil. Peel, finely dice the onion and sauté in the oil for about 2 minutes. Stir in the field beans and add the broth. Cover and simmer on low heat for 10-15 minutes, then continue cooking uncovered for another 3-5 minutes so the liquid can evaporate.

    Meanwhile wash the tomatoes, remove stems and halve or quarter them. Peel the radish and shave into thin slices. Mix the tomatoes with radish and field beans (with remaining liquid) in a bowl.

    Whisk together the ingredients for the dressing, drizzle over the vegetables and let rest about 15 minutes. Before serving gently stir the salad, taste again and plate garnished with parsley.
