- 1 kg Brussels sprouts
- Salt
- 150 g bacon (sliced)
- 2 tbsp clarified butter
- 60 g walnut kernels
- black pepper (freshly ground)
- Nutmeg (freshly grated)

Remove the outer leaves of the Brussels sprouts and make cross cuts on the stem. Blanch in boiling salted water for 8-10 minutes until firm. Cut the bacon into thin strips and brown in hot clarified butter for 2-3 minutes. Add the drained Brussels sprouts and cook together for another 2-3 minutes. Toast the walnuts separately and season everything with salt, pepper and nutmeg before serving.
