Ingredients

  • 3 tomatoes
  • 1 stalk Celery
  • 4 Spring Onions
  • 1 red chili pepper
  • 1 Lime (juice)
  • 1 tbsp Olive Oil
  • Salt
  • Pepper (freshly ground)
  • a pinch sugar
  • 2 tbsp chopped cilantro leaves
  • 500 g beef fillet
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • ground cumin
  • ground coriander
  • 4 tortillas
  • 1 tbsp barbecue sauce

Instructions

    For the salsa, blanch the tomatoes, cool them in ice water, peel, core and dice. Wash the celery, trim it and slice into thin rings. Rinse the spring onions, trim them and cut the thicker halves lengthwise, then slice into fine rings. Slice the chili, deseed if desired and finely chop. Combine all ingredients in a bowl. Add lime juice and olive oil, season with salt, pepper and sugar, and sprinkle with cilantro.

    For the wraps, wash the beef fillet, pat dry and cut into strips. Wash the bell peppers, halve them, remove seeds and slice into strips. Peel the onion and cut into strips.

    Heat olive oil in a skillet. Sear the beef, onions and bell peppers over high heat for 2‑3 minutes on medium‑high heat. Season with salt, pepper, cumin and coriander.

    Warm the tortillas briefly in another pan without oil.

    Stir barbecue sauce and 2‑3 tbsp of salsa into the cooked meat, taste and adjust seasoning. Spread the mixture onto the tortillas, fold them up and serve topped with remaining salsa and lime wedges.
