Ingredients

  • 1 l vegetable broth
  • 150 g quinoa
  • 2 Eggs
  • 3 EL breadcrumbs
  • Salt
  • 1 TL paprika powder (sweet)
  • chili powder
  • 4 EL Olive oil
  • 2 Tomatoes
  • 1 Avocado
  • 1 small red onion
  • 1 handful fresh chopped parsley
  • 2 EL lime juice

Instructions

    Bring the broth to a boil, stir in the quinoa and let it soak for about 20 minutes. Then drain, allow to cool slightly, mix in eggs and breadcrumbs, season with salt, paprika, and chili. The mixture should be firm enough to shape. Form about 16 small patties and fry them in a hot non-stick pan with 2 EL oil, 2-3 minutes per side until golden brown.

    For the salsa, wash the tomatoes, quarter, seed, and dice them. Peel the avocado, halve it, remove the pit, and dice the flesh. Peel the onion, halve it, and slice into thin strips. Mix the tomatoes, avocado, parsley, lime juice, and remaining oil; season with salt and pepper.
