Ingredients

  • 250 g low-fat quark
  • 30 g Butter
  • 2 tbsp sugar
  • 1 packet vanilla sugar
  • a pinch iodized salt
  • 1 egg
  • lemon zest
  • 80 g wheat grits
  • 1 tbsp breadcrumbs
  • 200 ml orange juice
  • 50 g butter
  • 125 g poppyseed loaf

Instructions

    Drain the quark over a sieve for one hour. Whisk the softened butter, sugar, vanilla sugar, salt and egg until frothy; fold in quark, lemon zest, grits and breadcrumbs, then let rise covered for 30 minutes.

    Bring salted water to a boil in a large pot. Dip a spoon into the hot water, use it to scoop small portions of the quark mixture. With a second wet spoon smooth the surface, drop the balls into the boiling water and release them with the second spoon.

    Repeat until all mixture is used. Turn off the heat and let the dumplings simmer in the open pot for about 12 minutes. Remove with a slotted spoon and drain.

    Whisk orange juice, butter and poppyseed loaf in a pan until it boils once; pour the poppyseed butter over the dumplings.
