Rice Salad with Dried Apricots

The rice salad with dried apricots tastes great for the whole family. Crunchy vegetables meet sweet fruit and fresh mint.

Ingredients

  • 200 g Basmati wild rice blend
  • Salt
  • 1 apple
  • 1 green bell pepper
  • 4 stalks celery
  • 50 g soft apricot
  • a pinch of raw sugar
  • 2 tbsp sesame oil
  • 2 tbsp white wine vinegar
  • soy sauce
  • 40 g roasted unsalted peanuts
  • 2 sprigs mint (for garnish)

Instructions

    Wash the rice and cook it in twice as much lightly salted water for about 25 minutes. Then transfer to a plate and let cool.

    Wash, peel, and dice the apple, bell pepper, and celery. Chop the apricots into small pieces and mix them with the apple, bell pepper, and celery in a bowl.

    Whisk sugar with oil, vinegar, and soy sauce and pour over the salad. Fold in the rice and season with additional soy sauce. Add peanuts, fill glasses or cups. Wash mint, dry and shake it, pluck leaves, and serve the rice salad with dried apricots on top of the mint.
