Fruitful Rice with Carrots, Herbs and Pecorino

Ingredients
- 400 g long grain rice
- 2 large carrots
- 2 small thin zucchinis
- 2 green apples
- 0.5 tsp paprika powder
- 1 tbsp capers
- 300 g crab meat (cooked)
- Salt
- Pepper
- 2 tbsp oil
- 150 ml Vegetable broth
- Basil

Peel the carrots and use a zester to create ridges, giving each carrot a flower shape. Slice into rounds. Wash the zucchinis and slice them.

Cook the rice in plenty of salted water according to package instructions (about 20 minutes). Add the carrot slices six minutes before the end of cooking time. Break the crab meat into bite-sized pieces and heat it with the zucchini slices in the broth. Wash the apples, quarter, core and dice them, then add to the crab mixture. Drain the rice, let it dry, then combine with the crab mixture and capers in a bowl. Season with salt and pepper. Slice basil into strips, sprinkle over the dish and adjust seasoning. Serve dusted with paprika.
