Ingredients
- 250 g sushi rice
- 3 tbsp Rice vinegar
- 1 tbsp mirin
- 2 tsp coconut blossom sugar
- 1 tsp salt
Instructions
-
1.
Rinse the sushi rice in a sieve under cold water until the runoff is clear. Let it drain in the sieve for about 20 minutes.
-
2.
Add the sushi rice and 500 ml water to a pot and bring to a boil uncovered.
-
3.
Cook uncovered over medium heat for 2 minutes, then cover and let stand on the turned-off burner for 20 minutes.
-
4.
Remove the pot from the stove, lift the lid and cover the sushi rice with a kitchen towel – let it sit for 10 minutes.
-
5.
In a separate pot combine rice vinegar, mirin, coconut blossom sugar, and salt; heat without boiling. Stir until the sugar and salt dissolve. Transfer the cooked rice to a bowl, spread it out slightly to cool faster. Fold in the vinegar mixture and allow the rice to cool completely. Cover with a damp kitchen towel before further use.
