Thyme Bean Rice

Try the delicious bean rice with thyme from Spoonsparrow!

Ingredients

  • 400 g Basmati whole‑grain rice
  • Salt
  • 400 g canned kidney beans
  • 1 Garlic clove
  • 2 onions
  • 100 ml Vegetable broth
  • 0.5 bunch thyme
  • Pepper

Instructions

    Cook the rice according to package instructions in boiling salted water.

  2. 2.

    Drain the beans, rinse under cold water and let them drain.

  3. 3.

    Peel the garlic and finely dice it. Peel the onions and cut them into thick rings.

  4. 4.

    Sauté the onion rings in a non‑stick pan over medium heat for about 1 minute until golden brown. Add the garlic and beans and cook for another minute.

  5. 5.

    Deglaze with broth and simmer for 2 minutes.

  6. 6.

    Meanwhile, wash the thyme, shake off excess water and pluck the leaves. Mix the thyme and onion mixture with the rice and season with salt and pepper.
