Ingredients
- 800 g raw veg (cucumber, carrots, zucchini, kohlrabi.. )
- 8 sheets rice paper
- chives (or green onion tops to tie)

Place the rice paper between two damp cloths and soak briefly.

Wash, clean, peel the vegetables and cut into 8-10 cm long thin sticks. Cut the rice paper sheets in half. Tie the mixed veg into small bundles with chives or green onion tops and roll them into the rice paper. Serve the fresh veggie spring rolls best with soy sauce or another spicy sauce to taste.
