Lamb Koftas with Couscous

Ingredients
- 300 g lamb mince
- 1 stale roll
- Semmelbrösel
- 1 egg
- 0.5 bunch coriander (finely chopped)
- 1 garlic clove (finely chopped)
- 1 tsp curry powder
- 2 tbsp sunflower oil
- Salt
- pepper (from the mill)
- 350 g couscous (cooked)
- 2 Bell peppers
- 100 g pine nuts
- 2 tbsp coriander (finely chopped)
- 3 tbsp parsley (finely chopped)
- olive oil (cold pressed)
- Salt
- freshly ground pepper
- 3 tbsp lemon juice (freshly squeezed)
- 150 g yogurt
- 1 tbsp fresh coriander (chopped)
- 2 tsp fresh peppermint (chopped)
- 0.5 tsp grated lemon zest

Soak the stale roll in lukewarm water, squeeze out excess liquid and mix with lamb mince, egg, coriander, chopped garlic and curry powder. If needed add Semmelbrösel until the mixture is well shaped. Season with salt and pepper. Form patties and fry each side for about 3 minutes in hot oil.

Wash the bell peppers, halve them, remove seeds and dice into small cubes. Heat 3 tbsp olive oil in a pan and sauté the peppers over medium heat for 5-6 minutes, stirring frequently. Add pine nuts and cook briefly. Then stir in couscous and herbs, cooking for 2-3 minutes while mixing. Season with salt and pepper. Stir in lemon juice and plate the koftas on dishes. Serve with yogurt sauce.

For the yogurt sauce combine all ingredients in a bowl and mix thoroughly, then refrigerate until ready to serve.
