Ingredients

  • 1 kg new potatoes
  • 1 bundle radishes
  • 1 cucumber
  • 2 tbsp chives sprigs
  • 1 tbsp dill tips
  • 300 g crème fraîche
  • 100 g heavy cream
  • 1 tbsp Lemon Juice
  • Salt
  • ground pepper
  • 1 tsp freshly grated horseradish
  • 4 matjes double fillets

Instructions

    Wash the potatoes and simmer them in their skins for about 30 minutes until tender.

    Wash, trim, and slice the radishes. Peel the cucumber, cut it lengthwise into halves, remove the seeds with a small spoon, and dice finely.

    Whisk together crème fraîche, heavy cream, and lemon juice until smooth; season with salt, pepper, and horseradish. Fold in radishes, cucumber, dill, and chives; taste and adjust seasoning.
